CHATHAM — Pair some fresh sheep’s milk cheese from popular artisanal cheese maker Valley Shepherd Creamery with wines made right here in New Jersey by Unionville Vineyards. Unionville is a special guest vendor at the farmers’ market, appearing the third Saturday of every month and Valley Shepherd is a new addition to the market, bringing a variety of sheep and mixed-milk artisan cheeses, yogurt and butter.This Saturday, at 11 a.m. is also the annual Heirloom Tomato Tasting, featuring heirloom tomatoes generously donated by Muth Family Farm, Melick’s Town Farm and our own Chatham Community Garden. After tasting the tomatoes, we invite market goers to vote for their choice for favorite tomato. It was a tight contest last year, with the Community Garden’s German Queen taking the top spot. Help choose this year’s winner.

A Filetta – Fromage Artisanal de Brebis | TastefulMoments™
It’s a wild island, mountainous, and the people are sometimes short tempered and rebellious too. And from this beautiful island there comes a cheese called A Filetta made of pasteurized(!) sheeps milk, or Brebis as it’s called. Brebis is another word for Ewe which of course again is a female sheep that has had lambs. Situated on the north east coats along the N198 south east of Bastia in the town of Isolaccio, if you happen to visit the island and want to tour on your own. Visits welcome.
If you come across it, and there is no reason you should not since it’s pasteurized, it’s easily recognizable because of a small fern leaf on top of the cheese.
This cheese has a distinct smell of barnyard. it comes pre-packed in plastic from the farm and it still smells. That’s a good start.
A pale orange washed rind that when it’s not completely fresh can feel like sand between your teeth. if too much so, cut it away. A fine semi-soft paste, of white to pale, with a few holes here and there.
The taste is like the smell, barnyard, but in a positive way. Then there is sheep and cream. This is a wonderful cheese, and as it is pasteurized it should be widely available. This cheese might for some fall into the category of stinking, but not any more than anyone, apart from my son, can bear over with it.
Pairs excellently with fig jam, so do try that.
To drink: A red wine from the Languedoc area, or a sweetish white from the Muscatel grape. Or as I had today; a good cup of Ceylon tea with a drop of milk.

A Filetta. A semi-soft artisan cheese from the beautiful island of Corsica in the Mediterranean. Pasteurized and made from sheep's milk: Brebis. Distinct smell of barnyard and sheep's wool. Taste much the same apart from the wool, but also of sheep and cream. A wonderful cheese everyone should try. Corsican or South-west France red or a sweetish muscatel wine. Works wonderful with a good cup of tea as well. Fresh French goat milk cheese, usually from the Loire. There are numerous varieties in a variety of shapes. Saint Maure de Touraine, Pyramide cendrè, Cabri de Gors, Bûcheron, Chabichou du Poitou are some famous brands out there. Some come as logs, some as pyramids and some come in a completely different shape. That's not really what matters. The Loire is also famous for its white, crisp, dry Sauvignon blanc wines like Sancerre and Pouilly-Fumé.
