Pita pockets, chilled soup and more picnic snacks

Ingredients 2 whole-wheat pitas, halved and opened 1/4 cup mayonnaise 1 teaspoon lemon zest 1/2 cup Arugula Pesto, recipe follows 2 store-bought rotisserie chicken breasts diced into 1/4-inch pieces 8 cherry tomatoes, quartered 1 cup arugula For arugula pesto 2 cups (packed) arugula 1 clove garlic, peeled and halved 1/2 cup olive oil 1/2 cup grated Parmesan cheese 1/2 teaspoon kosher salt, plus more to taste 1/4 teaspoon freshly ground black pepper, plus more to taste Preparation

For the pesto, blend the arugula and garlic in a food processor until finely chopped. With the machine running, gradually add the oil until well blended. Transfer to a large bowl and stir in parmesan cheese and salt and pepper totaste.

For the pita, preheat the oven to 300 degrees F. Arrange the pita halves on a baking sheet and bake for 5 to 7 minutes until warmed through.

In a large bowl, combine the mayonnaise, lemon zest and arugula pesto. Stir in the diced chicken.

To assemble the pita pockets, fill each pita half with chicken mixture. Top with tomatoes and 1/4 cup arugula and serve.

Ingredients For croutons 1/2 loaf (about 8 ounces) sourdough bread, cut into1/2-inch cubes 1/4 cup extra-virgin olive oil 1 tablespoon chopped fresh thyme leaves 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper For soup 10 to 12 strips (about 1 pound) thick-cut apple wood smoked bacon 3 tablespoons unsalted butter, at room temperature 1 large or 2 small shallots, thinly sliced 2 stalks celery, chopped to yield 3/4 cup 2 cloves garlic, coarsely chopped 2 teaspoons kosher salt 1/2 teaspoon freshly ground black pepper 1 (1 1/2-pound) head cauliflower, cut into 1-inch pieces 1 tablespoon chopped fresh thyme leaves 4 cups low-sodium chicken broth Preparation

For the croutons: Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Arrange the bread cubes in a single layer on a rimmed baking sheet. Drizzle with the olive oil. Sprinkle the thyme on top and season with salt and pepper. Toss until coated. Bake until golden and crispy, about 10 to 12 minutes. Set aside to cool.

For the bacon: On another baking sheet, arrange the bacon in a single layer. Bake for 15 to 17 minutes until brown and crispy. Drain on paper towels. When cool enough to handle, chop into 1/2-inch pieces. Set aside.

For the soup: In a large saucepan or Dutch oven, melt the butter over medium-high heat. Add the shallots, celery, 1 teaspoon salt and 1/4 teaspoon pepper. Cook until soft, about 4 minutes. Add the garlic and cook until aromatic, about 30 seconds. Stir in the cauliflower, thyme and broth. Bring the mixture to a boil. Reduce the heat to a simmer, cover the pan, and cook until the vegetables are tender, about 20 to 25 minutes. In batches, puree the soup in a food processor until smooth. Season with salt and pepper, to taste. Cool the soup to room temperature and refrigerate until ready to serve, at least 2 hours.
